There are actually many options when you go to a boba cafe, but the most popular you have seen is probably boba (tapioca) pearls.

What is Boba?

Boba or tapioca pearls are translucent and chewy dark brown pearls.

-Boba pearls are commonly made from tapioca starch which originates from the cassava root.

-The use of the tapioca starch makes boba pearls gluten free.

-While it comes in different colors and forms, the most recognizable are the translucent and chewy dark brown pearls.

-These chewy sensations are enjoyed with milk tea and other desserts

Homemade Tapioca Pearls Recipe
Servings: 6 cups


  • ¾ cup of Tapioca Starch (plus 1/3 cup for slurry mixture, dusting, and coating)
  • ¼ cup of Dark Brown Sugar or Chinese Black Sugar
  • ¼ cup of Water


    Making the Boba Pearls

    1. In a pot add ¼ c of water and ¼ c of dark brown sugar and cook until the sugar has completely dissolved. 
    2. Turn heat to the lowest setting and add 2 tbsp of the tapioca starch to the sugar mixture and stir until combined.
    3. Once combined turn the heat up to medium to thicken the sugar slurry mixture.
    4. In a bowl add the sugar slurry mixture with ¾ c tapioca starch. Stir with a wooden spoon until the mixture is cool enough to handle. Then knead until a dough is formed. You can use a stand mixer with a dough hook attachment or bread maker for this process.
    5. Cut the dough in half and wrap one half with plastic wrap.
    6. Dust some tapioca starch on your work surface and roll the dough into 1/2 inch logs.
    7. Cut the dough into 1 cm pieces (pea-size pieces).
    8. Form into balls and place them into a bowl with the 1/3 cup of tapioca starch to completely coat the boba pearls.
    9. If you are not cooking the boba pearls immediately, you can store them in the freezer in an airtight bag.

    Ingredients to Cook the Boba Pearls:

    • 6 cups of Water
    • 2 cups of Simple Syrup (1 cup of honey and 1 c hot water)

    Cooking the Boba Pearls

    1. In a pot, bring 6 cups of water to a rolling boil then add in the boba pearls. 
    2. Cook for 20 minutes at medium heat (setting 5 on a stovetop), stirring occasionally to avoid clumping.
    3. After 20 minutes turn off the heat and leave the boba pearl for 10 more minutes.
    4. Prepare the simple syrup in a bowl with 1 cup of hot water and 1 cup of honey. 
    5. Strain and rinse the boba pearls with cold running water.
    6. Then add the boba pearls into a bowl with the simple syrup and leave the boba pearls to soak for 15 minutes.


    Can make 6 cups of boba
